Production of germinated Red Jasmine brown rice and its physicochemical properties

چکیده
The effects of soaking conditions and anaerobic treatment on the gamma-amino butyric acid (GABA) content in germinated Red Jasmine brown rice (GBR) were investigated in this study. Firstly, GBR was produced by soaking brown rice grains in water at different temperatures (5, 28, 35oC) and soaking times (8, 16, 24 h), then GBR was incubated under nitrogen gas for 12 h. The results showed that GABA content in GBR was highest after soaking for 24 h at 35oC and its content obviously increased when stored under anaerobic condition. The number of microorganisms in the GBR increased during germination but steaming and boiling reduced the microbial load. Germinating altered the proximate composition of GBR and caused noticeable changes in the pasting characteristics.

Effect of Germination and Parboiling on Milling, Physicochemical, and Textural Properties of Medium- and Long-grain Rough Rice
Germinated brown rice is commonly consumed in Asia for its enhanced nutritional properties such as gamma-aminobutyric acid (GABA) and softer cooked texture. However germination decreases milling yield and alters some physicochemical properties, and most germinated rice studies evaluated medium-grain and aromatic rice cultivars. This study compared the effects of germination duration and parboil...

Using a wide range of techniques, including differential scanning calorimetry, X-ray diffraction, Rapid Visco Analyser and Fourier Transform Infera Red Spectroscopy, some physicochemical properties of the starch fraction of six Iranian rice cultivars (Tarom, Tarome Hashemi, Neda, Ramezani, Fajr and Kamfirouzi) [1]were studied and compared. DSC data showed that starch granules of different rice ...
متن کاملPhysicochemical and antioxidative properties of black, brown and red rice varieties of northern Thailand
Rice is the foremost cereal food crop in many developing countries. About half of the world population consumes rice as their major source of carbohydrate. Almost 95% of the rice production is recorded in Asian countries (Bhattacharjee et al., 2002). In addition to common white-rice varieties, there are some speciality rices such as the colored ones (black, also known as purple, brown and red)....
متن کاملEffects of Germinated Brown Rice Addition on the Flavor and Functionality of Yogurt
This study aimed to investigate the functional and physicochemical properties of yogurt, supplemented with germinated brown rice (GBR) containing γ-aminobutyric acid (GABA), during storage. GBR was produced by soaking brown rice at 30℃, and saccharified germinated brown rice (SGBR) was produced by treating brown rice with α- and β-amylase for 1 h, at 80℃ and 60℃, respectively. Yogurt was manufa...
متن کاملInfluence of germination time of brown rice in relation to flour and gluten free bread quality.
The effect of germination time on physicochemical characteristics of brown rice flour and its effect on gluten free bread qualities have been investigated. Germination was carried out at 28 °C and 100 % RH for 12, 24 and 48 h; brown rice and soaked brown rice was also analyzed. Significant changes on hydration and pasting properties of brown rice flour were found during germination. The starch ...
